Wheat flour extract is an allergen extract used for specific immunotherapy to treat IgE-mediated allergies to wheat, such as occupational baker's asthma and rhinitis. [1, 2, 3, 4] Administered sublingually (SLIT) or via subcutaneous injection (SCIT), it works by gradually desensitizing the patient's immune system to wheat allergens. [1, 2, 3, 4] Clinical evidence from a small study on SLIT showed that treatment led to an improvement in symptoms, reduced use of traditional drug therapy, and a significant reduction in inflammatory markers like exhaled nitric oxide (FeNO) and eosinophil cationic protein (ECP). [1, 3, 4] The primary allergens in wheat responsible for baker's asthma are believed to be salt-soluble proteins, particularly from the α-amylase/trypsin inhibitor family. [10, 12]
