Wheat peptide is a mixture of short-chain peptides derived from the enzymatic hydrolysis of wheat proteins, primarily gluten. These peptides are typically composed of dipeptides and tripeptides with molecular weights less than 1,000 Da. Wheat peptides are rich in essential and semi-essential amino acids (notably glutamic acid), and have demonstrated various bioactivities including antioxidant effects, anti-inflammatory properties, blood glucose regulation potential (such as DPP-IV inhibition), and support for intestinal barrier function.
