Overview

Yellowfin tuna (*Thunnus albacares*) is a commercially and ecologically important marine fish. Research indicates its physiological responses to environmental stressors like cold temperatures, affecting brain, muscle, and splenic tissues. Studies also explore its role in the marine food chain regarding mercury bioaccumulation and mitigation through thermal processing. Furthermore, components derived from yellowfin tuna, such as protein hydrolysates and peptides, are being investigated for potential health benefits, including anti-diabetic properties through the inhibition of α-amylase and dipeptidyl peptidase IV, and as a source of selenium. Peptides from yellowfin tuna have also shown potential for food applications by interacting with umami and bitter taste receptors for flavor enhancement and bitterness masking. The fish is also subject to studies on parasitic infections, microplastic and phthalate ester contamination, and factors influencing its distribution.
