Overview

Aflatoxins are a group of highly toxic, carcinogenic, and mutagenic compounds produced by certain species of the Aspergillus fungus, primarily Aspergillus flavus and Aspergillus parasiticus. They contaminate agricultural crops and pose significant public health risks through dietary exposure. The most potent form is aflatoxin B1, which is metabolized into a reactive epoxide that binds DNA and proteins, leading to mutations and cellular damage.
