Overview

Subtilisin is a non-mammalian, extracellular serine protease primarily produced by bacteria such as *Bacillus subtilis* and *Bacillus amyloliquefaciens*. It is an endopeptidase that catalyzes the hydrolysis of peptide bonds in proteins via a well-conserved Asp-His-Ser catalytic triad, structurally unrelated to mammalian serine proteases like chymotrypsin, but functionally similar via convergent evolution. Subtilisin has broad industrial and research applications (e.g., detergents, food processing, protein engineering) due to its stability in harsh conditions, thermostability, and wide substrate specificity, but is not classified as a human drug target.
