Beta-parvalbumin is a low molecular weight, calcium-binding protein and the major allergen responsible for fish-induced food allergies, including those from perch and the majority of other bony fish. It is highly conserved and cross-reactive, making it responsible for broad reactivity among fish-allergic individuals. It is heat-stable, resistant to digestion, and primarily found in fish muscle. Upon ingestion, it can trigger immune responses leading to clinical symptoms ranging from mild oral or gastrointestinal symptoms to severe, life-threatening anaphylaxis[3][4][5][7][9].
