Overview

The primary protein allergens in black sea bass (Centropristis striata) are parvalbumins, which are small, acidic calcium-binding proteins highly prevalent in fish muscle. Parvalbumins are responsible for more than 95% of IgE-mediated allergic reactions to fish. Other potential allergenic proteins identified in black bass include β-actin.
