Excessive accumulation of these compounds, known as carbonyl stress, leads to the covalent modification of proteins and DNA, resulting in the formation of Advanced Glycation End-products (AGEs) and Advanced Lipoxidation End-products (ALEs) (PMID: 10333930). These modifications are heavily implicated in the progression of chronic diseases, particularly diabetic complications, atherosclerosis, and neurodegenerative disorders like Alzheimer's disease (PMID: 31747808).
