Chitinases from glycoside hydrolase family 18 (GH18) are enzymes that catalyze the hydrolysis of chitin, a linear polymer of N-acetyl-β-D-glucosamine. GH18 chitinases are widely distributed and play diverse biological roles such as nutrient acquisition, morphogenesis, defense against pathogens, and involvement in immune responses including allergic inflammation.
