Overview

Dietary carbohydrate substrates are a diverse group of organic compounds, including monosaccharides, disaccharides, and polysaccharides, that serve as the primary source of metabolic energy for humans (Slavin & Carlson, 2014). These substrates are processed by various digestive enzymes, such as amylase and alpha-glucosidase, which break down complex starches and sugars into simple monosaccharides like glucose for absorption into the bloodstream (Holeček, 2021). While these substrates are not therapeutic targets in the classical sense, they are the focus of nutritional and pharmacological strategies aimed at managing metabolic diseases. For example, alpha-glucosidase inhibitors like acarbose competitively inhibit the enzymes responsible for carbohydrate digestion, thereby slowing the rate of glucose absorption and reducing postprandial hyperglycemia in patients with type 2 diabetes (Dirir et al., 2022). Furthermore, non-digestible carbohydrates, or dietary fibers, act as substrates for gut microbiota, influencing metabolic health and systemic inflammation (NIH, 2023). The regulation of these substrates is central to the management of conditions such as obesity and metabolic syndrome.
