Overview

Dietary starch and oligosaccharides are complex carbohydrates that function as the primary source of exogenous glucose in humans. Starch is composed of glucose polymers, specifically amylose and amylopectin, while oligosaccharides consist of shorter chains of three to ten monosaccharide units [1]. While they are essential for energy metabolism, they are not biological targets in the traditional pharmacological sense; rather, they are substrates for digestive enzymes like alpha-amylase and alpha-glucosidase [2]. Pharmacological intervention typically focuses on these enzymes to modulate the rate at which starch and oligosaccharides are hydrolyzed into absorbable glucose. For instance, alpha-glucosidase inhibitors like acarbose are used to manage postprandial blood glucose levels in patients with type 2 diabetes by delaying the digestion of these carbohydrates [3]. Excessive consumption of these carbohydrates is a major driver of metabolic diseases such as obesity and type 2 diabetes. Conversely, the malabsorption of certain oligosaccharides can lead to gastrointestinal symptoms like bloating and flatulence due to fermentation by gut microbiota [2]. Therefore, while they are dietary components, their processing is a critical focal point for therapeutic strategies in metabolic health.
