Dietary starch and other digestible carbohydrates are the primary source of metabolic energy in the human diet, consisting of complex polysaccharides like amylose and amylopectin as well as simpler disaccharides (StatPearls, NBK459280). These molecules are not therapeutic targets in the traditional sense (e.g., receptors or enzymes); rather, they serve as the substrates for digestive enzymes such as alpha-amylase and alpha-glucosidase (PubMed, 25514226). In the context of metabolic diseases like type 2 diabetes, the rate of carbohydrate digestion and subsequent glucose absorption is a critical factor in glycemic control (NIH, MedlinePlus). Pharmacological intervention often involves inhibiting the enzymes that break down these carbohydrates to prevent rapid increases in postprandial blood glucose levels (StatPearls, NBK557848). Excessive consumption of digestible carbohydrates is strongly linked to the development of obesity and insulin resistance (Wikipedia, Carbohydrate metabolism). Therefore, while the carbohydrates themselves are nutrients, their metabolic pathway is a major focus for drug development and nutritional therapy.
