Overview

Dietary starch and other polysaccharides are complex carbohydrates that serve as the primary energy source for humans, consisting of glucose polymers like amylose and amylopectin (StatPearls, 2023). These molecules are not therapeutic targets themselves but are the substrates for digestive enzymes such as alpha-amylase and alpha-glucosidase (NIH, 2022). In the management of metabolic disorders like type 2 diabetes, the rate of starch digestion is pharmacologically modulated to prevent rapid spikes in blood glucose levels (PubMed, 2021). Drugs like acarbose and miglitol target the enzymes responsible for hydrolyzing these polysaccharides, effectively slowing glucose absorption and improving glycemic control (PubChem, 2024). Additionally, non-digestible polysaccharides, known as dietary fiber, play a crucial role in gut health and the modulation of the microbiome (Wikipedia, 2024).
