Overview

Dietary starch molecules are plant-derived polysaccharides made up entirely of D-glucose monomers linked primarily by alpha-glycosidic bonds. They exist mainly as two types—linear amylose (~10–30%) and highly branched amylopectin (~70–90%). Their structural features determine their physical properties in food processing as well as their digestibility—which has direct consequences for human health outcomes related to energy metabolism.
