Overview

Egg protein allergens are specific proteins found primarily in egg white (and to a lesser extent, egg yolk) that can trigger allergic reactions in sensitized individuals. The major allergens include ovomucoid, ovalbumin, ovotransferrin, lysozyme, and alpha-livetin. Reactions are primarily IgE-mediated, leading to various symptoms ranging from cutaneous reactions and gastrointestinal distress to respiratory issues and anaphylaxis. Cross-reactivity between different avian eggs and bird antigens (bird-egg syndrome) is a notable concern. Ovomucoid is considered the dominant allergen due to its heat and digestion stability.
