Ghrelin secretion by ε-cells refers to the production and release of the hormone ghrelin from a rare population of endocrine cells—ε-cells—located in the islets of Langerhans within the pancreas. Ghrelin is best known as a hunger-stimulating hormone, but it also plays roles in growth hormone (GH) secretion, energy homeostasis, glucose regulation, and gastrointestinal motility. While ε-cells are a minor source of circulating ghrelin in adults, their developmental plasticity and potential for conversion into beta-cells make them a focus for diabetes research.
