Overview

Erythritol is a four-carbon sugar alcohol (polyol) with the formula C₄H₁₀O₄ and a molecular weight of 122.12 g/mol[1][6][7]. It occurs naturally in some fruits, fermented foods, and is commercially produced from glucose by fermentation[5][6]. Erythritol tastes about 60–70% as sweet as sucrose, has a strong cooling sensation when dissolved, and is almost non-caloric since it is poorly metabolized and largely excreted unchanged in urine[1][5][6]. It is approved for use as a sweetener in numerous countries, considered safe, does not promote dental caries, and does not raise blood glucose or insulin levels[6][5][2]. It is not a therapeutic target, receptor, enzyme, or protein and thus not relevant for pharmacological targeting or biomarker use[6][1][3].
