Streptococcus mutans glucosyltransferases are a set of enzymes produced by S. mutans, a principal causative agent of dental caries. These enzymes, commonly designated GtfB, GtfC, and GtfD, catalyze the conversion of dietary sucrose into high-molecular-weight α-glucan polymers with distinct solubility profiles. GtfB mainly synthesizes water-insoluble glucans (key for sticky biofilm), GtfC produces both insoluble and soluble glucans, and GtfD synthesizes water-soluble glucans. All three belong to the glycoside hydrolase family 70 and are essential for bacterial adhesion, biofilm architecture, and cariogenesis. Molecular inhibition of these targets is a major focus for anti-caries drug development and oral hygiene interventions.
