It is formed by the oxidation of glucose and is present naturally in fruits, honey, and wine[4][1]. The ion is well known for its ability to chelate metal ions such as calcium, iron, and magnesium, a property exploited in medical products and cleaning agents[5][1]. Pharmaceutical uses are mostly as salts—calcium, ferrous, or quinidine gluconate—where the cation is therapeutically active, and gluconate acts as a safe, water-soluble carrier[4]. The molecule is not itself a protein, receptor, enzyme, or biological target, but rather a metabolite and excipient.
