Overview

Gluten peptide antigens are specific fragments of gluten proteins that trigger immune responses, particularly in individuals with celiac disease (CeD) and other gluten-related disorders. The most well-characterized immunogenic fragment is the 33-mer peptide from α-gliadin. These peptides can elicit both innate and adaptive immune responses, primarily through activation of CD4+ T cells via HLA-DQ2/DQ8 presentation. Detection of these peptides can be used to monitor dietary adherence in celiac patients. High proline and glutamine content makes these peptides resistant to digestion.
