IgE antibodies specific for Sin a 1 are the primary immunological drivers of yellow mustard (Sinapis alba) allergy. Sin a 1 is a 2S albumin seed storage protein and is recognized as the major allergen in mustard due to its high prevalence of sensitization among mustard-allergic individuals (Palomares et al., 2005). These specific IgE antibodies circulate in the blood and bind to the high-affinity FcεRI receptors on the surface of mast cells and basophils. Upon subsequent exposure to mustard, the Sin a 1 protein cross-links these receptor-bound IgE molecules, triggering the immediate release of inflammatory mediators like histamine, which causes symptoms ranging from mild skin reactions to systemic anaphylaxis (Sirvent et al., 2012). While there are no therapies that exclusively target Sin a 1-specific IgE, the monoclonal antibody Omalizumab acts as a general IgE blocker by binding to the Fc region of IgE, thereby preventing the allergic cascade (Gould & Sutton, 2008). Measurement of Sin a 1-specific IgE levels in serum is a standard diagnostic tool used to confirm mustard allergy and assess the risk of severe reactions (Monsalve et al., 2001).
