Overview

Interfacial tension at the water–oil interface refers to the energetic cost per unit area (commonly measured in milliNewtons per meter, mN/m) needed to expand the interface between immiscible liquids such as water and oil[6][7]. This tension arises because water and oil molecules interact more strongly with their own kind than with each other (cohesion and adhesion forces), creating a distinct boundary. Surfactants (surface-active agents) can be added to decrease this tension, which is central to the formation of emulsions and the effectiveness of detergents, cosmetics, and food products[3][6]. Interfacial tension is a physicochemical property rather than a specific molecule, receptor, or protein, and is not a conventional therapeutic target in biomedicine[3][6].
