Interfacial tension at the water–oil interface refers to the energetic cost per unit area (commonly measured in milliNewtons per meter, mN/m) needed to expand the interface between immiscible liquids such as water and oil[6][7]. This tension arises because water and oil molecules interact more strongly with their own kind than with each other (cohesion and adhesion forces), creating a distinct boundary.
