Overview

Lentil protein allergens are a group of proteins found in lentils (Lens culinaris) that can trigger allergic reactions in susceptible individuals. The major allergens identified include Len c 1 (a vicilin), Len c 2 (a biotinylated seed protein), and Len c 3 (a lipid transfer protein). These allergens elicit an IgE-mediated immune response, leading to symptoms ranging from mild skin reactions to severe anaphylaxis. Cross-reactivity with other legumes is common. Management involves strict avoidance of lentils and emergency preparedness with epinephrine for those at risk of anaphylaxis.
