Microbial cellular proteins are proteins produced by microorganisms such as bacteria, yeasts, fungi, and algae. These proteins serve as essential structural and functional components within microbial cells and can also be harvested for use in food, feed, or industrial applications. The term is often used interchangeably with "single-cell protein" (SCP) or "microbial protein," especially when referring to the biomass or protein extract from these organisms used as a nutritional source. They exhibit diverse functions including catalysis, signal reception/transduction, molecular transport, and motility. They may also act as effectors during host-pathogen interactions, modulating host processes through molecular mimicry or post-translational modifications. As single-cell protein sources, they represent an efficient solution toward meeting global nutritional demands while minimizing environmental impact.
