Overview

"Myofibrillar integrity" refers to the preservation of structure and function within myofibrils—the contractile units composed primarily of actin, myosin, tropomyosin-troponin complexes, titin, nebulin, desmin and other associated proteins found in striated muscle cells[2][3]. This concept encompasses the maintenance of ordered secondary structures (such as α-helices), prevention of oxidative damage to amino acid side chains (e.g., carbonylation), stabilization against denaturation during stressors like freeze-thaw cycles or processing conditions,[1] and retention of solubility/emulsifying properties important both physiologically and industrially.[4] Loss or disruption leads to impaired muscle function or reduced meat product quality but does not represent an individual molecular target amenable to direct pharmacological intervention.
