Overview

Oat beta-glucan soluble fiber is a linear polysaccharide composed of β-D-glucopyranosyl residues linked by β-(1,3) and β-(1,4) glycosidic bonds, forming a molecule with notable viscous and gel-forming properties. Found mainly in the outer layers of the oat kernel endosperm, this dietary fiber is resistant to digestion by human enzymes, reaches the colon intact, and undergoes fermentation by gut microbiota, resulting in increased fecal bulk and production of beneficial short-chain fatty acids. Oat beta-glucan’s viscosity mediates physiological effects, including reducing total and LDL cholesterol, attenuating postprandial glycemic excursions, and supporting colon and metabolic health. It is approved by regulatory authorities for cholesterol-lowering health claims in foods, but is not a conventional drug target or receptor. While oat beta-glucan soluble fiber is highly bioactive, it does not function as a molecular target for drugs or act as a receptor, enzyme, or transporter. Instead, its health effects result from physical-chemical interactions in the gastrointestinal tract and modulation of the gut microbiota.
