Overview

The oil-water interface in the gut lumen is the boundary formed during intestinal digestion when emulsified dietary lipids (from bile and peristalsis) coexist with the aqueous environment of the gastrointestinal tract[2]. This physical interface is where key enzymatic hydrolysis of lipids occurs, primarily via pancreatic lipase, which requires the presence of bile salts and colipase to act efficiently on triglyceride droplets. Proper function of this interface enables micellization and subsequent absorption of fats and fat-soluble nutrients into enterocytes. Disturbance in its formation or function, such as in bile acid deficiency or pancreatic enzyme insufficiency, leads to malabsorption syndromes but the interface itself is not a drug target, molecule, or receptor[2][8].
