Overview

Ara h 1 is a major peanut allergen, recognized by IgE from over 90% of peanut-allergic individuals. It belongs to the vicilin protein family and functions as a seed storage protein in peanuts. Its trimeric structure confers high stability, making it resistant to heat and digestion. Sensitization to Ara h 1 is associated with increased risk of severe allergic reactions. It contains multiple IgE-binding epitopes. Roasting increases its allergenicity.
