Porcine-derived proteases are a group of enzymes extracted from the pancreas of pigs, including trypsin, chymotrypsin, elastase, and carboxypeptidases. These enzymes catalyze the hydrolysis of peptide bonds in proteins, facilitating their digestion into smaller peptides and amino acids. They are used in pancreatic enzyme replacement therapy (PERT) for conditions like cystic fibrosis-related pancreatic insufficiency, as well as in biotechnology for cell dissociation and protein processing, and in the food industry for protein degradation.
