These proteins are organized into thick and thin filaments within the sarcomere, the basic functional unit of muscle, where they facilitate contraction through ATP-dependent cross-bridge cycling [2]. In the field of food science and technology, these proteins are highly valued for their functional properties, including their ability to form heat-induced gels and emulsify fats, which are crucial for the texture and quality of processed pork products [3]. From a medical perspective, pork myofibrillar proteins are not considered therapeutic targets for drug intervention; instead, they are studied in the context of nutrition and food hypersensitivity [4]. While rare, certain individuals may develop IgE-mediated allergies to these proteins, sometimes associated with cross-reactivity in pork-cat syndrome, where patients sensitized to cat dander react to porcine muscle proteins [5].
