Salivary proteins constitute a diverse and complex mixture of over 3,000 proteins and peptides secreted by the major and minor salivary glands into the oral cavity. Furthermore, the modulation of salivary protein secretion is a primary goal in treating xerostomia (dry mouth) using secretagogues that act on glandular receptors.

Systemic drugs often interact with the production or composition of these proteins, such as cyclosporine-induced changes in salivary cytokines that contribute to gingival overgrowth.
