Starch polysaccharide is a plant-synthesized polymer of α-D-glucose, composed of linear amylose and highly-branched amylopectin. It functions as an essential energy storage molecule in plants and is a major dietary carbohydrate for humans and animals. Digestion in animals is mediated by enzymes such as amylase, producing glucose for absorption and metabolism[3][7][2][1]. Starch is not a receptor, enzyme, or structurally defined therapeutic target, although its metabolism is important in nutrition and health.
