Stilbene synthase is an enzyme playing a crucial role in the biosynthesis of stilbenes, which are phytoalexins produced by plants in response to microbial infections. It belongs to the type III polyketide synthase family and is closely related to chalcone synthase. Stilbenes have various health benefits, including antioxidant, anti-inflammatory, and anticancer properties. The enzyme catalyzes the formation of resveratrol and other stilbenes by condensing malonyl-CoA units with p-coumaroyl-CoA or cinnamoyl-CoA derivatives. Stilbene synthase is used in metabolic engineering to enhance plant disease resistance and improve crop quality.
