Overview

A texturizer is not a specific biological molecule or receptor but a functional classification for a diverse group of substances used to modify the physical properties of products in the food, cosmetic, and pharmaceutical industries. These substances, which include polysaccharides like pectin and carrageenan, proteins like gelatin and whey, and various synthetic polymers, are primarily utilized to enhance viscosity, elasticity, stability, and mouthfeel [2, 11, 18]. In pharmaceutical applications, texturizers function as excipients that assist in the formulation of orally disintegrating tablets, topical gels, and controlled-release delivery systems by forming protective matrices or modifying rheological characteristics [3, 4, 7]. While generally considered pharmacologically inactive, certain texturizers have come under scientific scrutiny for their potential to interact with the gut microbiome and induce low-grade inflammation or intestinal barrier disruption [5, 15]. For instance, carrageenan and specific emulsifying texturizers have been studied for their roles in promoting inflammatory conditions in animal models [5, 17]. Thus, while not therapeutic targets themselves, texturizers are significant in the context of drug delivery optimization and the broader health implications of dietary additives [12, 13, 17].
