Overview

Thaumatin is a mixture of intensely sweet proteins derived from the West African fruit Thaumatococcus daniellii (UniProt P02883). It is primarily recognized as a low-calorie sweetener and flavor modifier, being approximately 2,000 to 3,000 times sweeter than sucrose on a weight basis (PubChem CID 10197558). Biologically, thaumatins are members of the pathogenesis-related protein family 5 (PR-5), which are involved in plant defense mechanisms against fungal pathogens (Wikipedia). In humans, thaumatin interacts with the TAS1R2-TAS1R3 sweet taste receptor to produce a sweet sensation that is characterized by a slow onset and a long-lasting, licorice-like aftertaste (PubMed PMID: 11742422). Although it is used as a pharmaceutical excipient to mask bitter flavors, it is not a therapeutic target for the treatment of diseases (EFSA Journal 2015;13(11):4290).
