UDP-glucose:flavonoid 3-O-glucosyltransferase (RsUFGT) is a critical enzyme in the anthocyanin biosynthetic pathway of the radish plant (Raphanus sativus). It catalyzes the final step in the synthesis of stable anthocyanins by transferring a glucose molecule from UDP-glucose to the 3-hydroxyl group of various anthocyanidins, such as cyanidin and pelargonidin. In agricultural and horticultural research, RsUFGT is identified as the major control point for the spatial and temporal accumulation of red and purple pigments in radish taproots and other tissues. Its expression is tightly regulated at the transcriptional level by the MYB-bHLH-WD40 (MBW) protein complex, and it is a primary focus for genetic manipulation to enhance the antioxidant content and nutritional value of radish crops. While RsUFGT is not a therapeutic target for human diseases, the anthocyanins it produces are secondary metabolites widely recognized for their potential health-promoting and antioxidant properties in the human diet.
