Xylose isomerase (EC 5.3.1.5) is an enzyme that catalyzes the reversible interconversion of D-xylose and D-xylulose, as well as D-glucose and D-fructose. It belongs to the family of isomerases, specifically intramolecular oxidoreductases that interconvert aldoses and ketoses. Industrially, it's used in the production of high fructose corn syrup. It is also used therapeutically to help individuals with fructose intolerance.
